The Beginnings
In 2014, DICED was a crazy business idea pitched at the Thanksgiving table. By 2015, Michelle Woodward packed up and moved from Louisville to Cary, NC - focused entirely on building DICED from the ground up. At 25 with no real experience (other than sports), she worked every day, open to close, to figure things out. Alongside her brother, who is now a fine-dining chef in Nashville, they honed the recipes, built the systems for ultimate freshness, and quickly turned DICED into a local favorite.
Her mission was to create a restaurant where quality, health and convenience could co-exist. Michelle approached DICED from a customer's viewpoint - focusing on top-notch ingredients that you could trust. To her, "fast" or “casual” didn't have to mean "low quality." The most important thing was being proud of the product they served & to never stop improving.
Originally from Northern Virginia, Michelle has been flipping and twisting since 2 years old. What started as gymnastics eventually evolved into competitive cheerleading at the University of Louisville - where she became a four-time World Cheerleading Champion, two-time NCA College National Champion, and a Team USA Gold Medalist in 2012. That level of competition demands discipline, consistency, and a refusal to cut corners or settle for "good enough.” When her athletic career came to an end, DICED became the place to put all of that into something new.
What started as one shop in Cary has grown to five locations across Raleigh, Cary, and Holly Springs - including the largest location on Main Street in Holly Springs that also serves as the prep kitchen for every store, making our housemade dressings & quality proteins daily. Despite often being mistaken for a franchise or a large chain, DICED proudly remains 100% independent and local to North Carolina.
Voted Best New Business, Best Salads, Best Lunch Spot, Best Healthy Eats, and Best Vegan/Vegetarian, DICED keeps it simple and keeps it real. Proteins and veggies prepped fresh daily. Homemade dressings made in small batches with real ingredients. Every salad diced right in front of you. We let the crave-able food speak for itself.

Nope! Although we are often mistaken for a franchise or chain, we are a small business local to Raleigh, NC. We do not have any locations outside of the Triangle and all locations are privately owned & operated.

We noticed that eating healthy wasn’t as simple or easy as it should be. We keep it clean, keep it simple, and make it fast. Our menu is endlessly customizable with no restraints which makes it perfect for people with dietary preferences or restrictions. Michelle is dairy-free and a little particular, so to be able to make something “your way” wasn’t out there.
